In the Mediterranean basin, olive oil production represents an important economic sector for some countries. Currently, is constantly growing and done at expense of environment. addition to its main product, which virgin oil, it generates two by-products, mill pomace (OMP) wastewater (OMW). These by-products have heretofore little value despite their large constitutions polyphenols that are great importance in pharmaceutical industry.
